This Ain’t Dominos OR DiGiornio

Pizza for breakfast is a college thing. Inhale some Papa Johns after a late night out and wake up for a few cold slices in the early afternoon? Done.

But pizza can also be an adult brunch option, which is exactly why we attempted a pre-work gourmet pie. With a little night-before preparation and some good multitasking skills, delicious breakfast pizza is even easier than delivery.

Ready to Eat

Gourmet Breakfast Pizza (loosely adapted from Smitten Kitchen)


  • Pizza crust or dough
  • 2 cups cheese (we used Parmesan and mozzarella)
  • Assorted veggies and/or meat
  • Eggs
  • Scallions and shallots
  • Herbs


Preheat oven to 500 degrees. Roll out dough into 12-14 inch round.

Arrange veggies and meat (already cooked) on crust. Cover with cheese, and break eggs over top. Bake for 15 minutes or until eggs are cooked overeasy and cheese/crust are brown. Remove from oven and sprinkle with scallions, shallots and herbs.


The one problem we had with this recipe was cooking the crust without overcooking the eggs. When we cut into the pizza, the center was still doughy. This wouldn’t be a problem with prebaked crust, and maybe the best solution is to “cook” the dough as the oven preheats. But suggestions welcome!

We also want to give a shoutout to local restaurants that do pizza brunches, which is a pretty non-traditional menu choice. Rachel likes Red Rocks, and I’ve heard great things about Pizzeria Paradiso. Any other DC spots?
